Chicken Bruschetta with Fresh Basil

Ingredients

1 stick French bread
1 cup (250 mL) diced cooked chicken
4 small tomatoes, chopped
2 cloves garlic, minced
1/2 cup (125 mL) chopped fresh parsley
1/2 cup (125 mL) chopped fresh basil
2 tbsp (30 mL) Dijon mustard
1 tbsp (15 mL) olive oil
1 tsp (5 mL) lemon juice
1 tsp (5 mL) balsamic vinegar
1 tsp (5 mL) black pepper
1/2 cup (125 mL) grated Cheddar cheese
1/4 cup (50 mL) grated Parmesan cheese

Directions

Bruschetta is traditionally served al pomodoro, which means with tomato, olive oil and garlic. This variation is an exceptional one.

Slice the bread lengthwise and toast lightly in the oven. In a bowl, combine the chicken, tomatoes, garlic, parsley, basil, Dijon mustard, olive oil, lemon juice, balsamic vinegar, and pepper. Spread tomato mixture over the toasted bread and sprinkle with Cheddar and Parmesan cheese.

Broil for 2 to 3 minutes, until cheese has melted. Serve immediately.

Makes 4-6 servings.

Kenny Kick: You can serve this as a delicious appetizer, or you can enjoy it as a light afternoon lunch.

Variation: Replace tomatoes with chopped zucchini.

Tip: You can use leftover chicken and day-old bread; it still tastes great.
