75 mL (1/3 cup) fine dry bread crumbs
15 mL (1 tbsp) minced parsley
45 mL (3 tbsp) grated Parmesan cheese
2 large egg whites
10 mL (2 tsp) water
2 skinned and boned chicken breasts (about 500 g/1 lb), halved and pounded to 5 mm (1/4 in) thickness
30 mL (1 tbsp) olive oil
1 lemon, quartered lengthwise
Combine the bread crumbs and parsley on a plate. Place the cheese on another plate. In a small bowl, lightly beat the egg whites with the water.
Dip the chicken breasts into the cheese, then into the egg whites, then into the crumb mixture, coating both sides evenly.
Lay them on a rack and refrigerate, uncovered, for 20 minutes.
Heat the olive oil in a heavy 25 cm (10 in) skillet over moderately high heat for 1 minute; add the chicken and brown about 3 minutes on each side or until no longer pink when cut near the centre.
Transfer the chicken to a warm platter, garnish with the lemon quarters, and serve.
