1 cup (250 mL) butter, softened
1 cup (250 mL) brown sugar, lightly packed
1 cup (250 mL) sugar
2 tsp (10 mL) vanilla
1-1/2 cups (375 mL) all-purpose flour
1 tsp (5 mL) baking powder
1 tsp (5 mL) baking soda
2 cups (500 mL) oats
2 cups (500 mL) toasted rice cereal
1 cup (250 mL) coconut, flaked or shredded
Cream butter, sugars, eggs, and vanilla together thoroughly. Combine flour, baking powder, soda, and oats. Stir into creamed mixture. Mix well. Stir in rice cereal and coconut. Drop dough by spoonfuls onto greased baking sheets. Bake at 350°F (180°C) for 10-12 minutes, or until light golden. Don’t overbake.
Makes 6 dozen cookies.
