30 mL (2 tbsp) butter or margarine, at room temperature
5 mL (1 tsp) grated lemon rind
1 mL (1/4 tsp) each salt and black pepper
4 medium-size fresh ears of corn, broken in half
- Preheat the oven to 230°C (450°F). In a small bowl, stir together the butter, lemon rind, salt, and pepper.
- Place 2 half ears of corn on a piece of heavy foil. Repeat with the remaining corn. Spread the corn with the butter mixture; wrap corn in the foil.
- Bake for 30 minutes or until corn is tender. Remove foil. To serve, insert corn holders in the ends of each ear.
