Ingredients

2 cups (500 mL) whole wheat or all-purpose flour
2/3 cup (150 mL) brown sugar, packed
1 tbsp (15 mL) baking powder
1/2 tsp (2 mL) salt
1 tbsp (15 mL) grated orange rind
1-1/2 cups (375 mL) shredded Canadian Swiss cheese
1-1/2 cups (375 mL) fresh or frozen blueberries
2 eggs
1 cup (250 mL) milk
1/4 cup (50 mL) melted butter
1 tsp (5 mL) vanilla

Directions

In large bowl, combine flour, brown sugar, baking powder, salt, and orange rind. Mix well. Stir in cheese and blueberries. Beat together eggs, milk, butter, and vanilla. Pour over dry ingredients and stir just until moistened. Spoon into large greased or paper-lined muffin tins, filling them 3/4 full. Bake in a 375ºF (190ºC) oven for 20 to 25 minutes or until golden brown and firm to the touch. Let stand 5 minutes before turning out onto rack. Serve warm or cold.
