Ingredients

4 red snapper fillets
2 eggs
60 mL (1/4 cup) flour
120 mL (1/2 cup) green onion, finely chopped
120 mL (1/2 cup) parsley, finely chopped
5 mL (1 tsp) paprika
2.5 mL (1/2 tsp) each sweet basil, oregano, thyme, salt and pepper
1.25 mL (1/4 tsp) cayenne
120 mL (1/2 cup) breadcrumbs
30 mL (2 tbsp) vegetable oil
Exotic Fruit Salsa
1 mango, diced small
2 kiwi fruit, diced
1 lime, sectioned
1 lime, zested and juiced
1/2 pineapple, diced small
5 mL (1 tsp) chili pepper

Directions

Mix eggs and set aside. Spread flour on a wooden surface. In a large baking dish, combine the rest of the ingredients. Dip fish into egg mixture until both sides are covered. Follow by dipping fish into flour and then breadcrumb mixture. Bake in pre-heated oven at 350ºF (180ºC) for 20 minutes or until completely cooked through. Less time is needed if the snapper fillets are thin. Top with exotic fruit salsa.

Makes 4 servings.
