454 g (1 lb) boneless precooked ham steak, cut into 2.5 cm (1 in) cubes
2 medium-size carrots, peeled and sliced 5 mm (1/4 in) thick
75 mL (1/3 cup) maple syrup
15 mL (1 tbsp) Dijon mustard
2 cans (454 g/1 lb each) baked beans, drained
30 mL (2 tbsp) ketchup
2 mL (1/2 tsp) each dry mustard and chili powder
125 mL (1/2 cup) dry bread crumbs
15 mL (1 tbsp) unsalted butter or margarine, melted
Place the ham in the centre of an ungreased 27.5 cm x 22.5 cm x 5 cm (11 x 9 x 2) microwave-safe baking dish. Arrange the carrots in a single layer around the edge of the dish. Combine the maple syrup and Dijon mustard in a small dish, then pour over the ham and carrots.
Cover with microwave-safe plastic food wrap, vent by turning back one corner, and microwave on High for 8 minutes, stirring the carrots once midway. Mix the beans with the ketchup, dry mustard, and chili powder in a large bowl, then spoon on top of the ham and carrots. Microwave, uncovered, on High for 8 minutes, stirring midway.
Toss the bread crumbs with the butter in a small bowl, then sprinkle over the beans and microwave, uncovered, on High for another 2 minutes. Or, if you prefer, transfer to a preheated broiler and broil 10 cm (4 in) from the heat for 1 minute or until tipped with brown.
