7 Grain Bread with Vegetables, Herbs, Goat Cheese & Olives

This recipe is great for any type of leftover or grilled vegetables. The goat cheese can be replaced with any other type of cheese (blue, feta, Stilton, Swiss, Edam).

Ingredients

4 slices of toasted 7 grain bread
1 cup (250 mL) goat cheese
2 tbsp (30 mL) fresh rosemary
1 small zucchini, sliced lengthwise
1 small tomato, sliced
1/2 cup (125 mL) olives
1 sweet red pepper, sliced lengthwise
1 cup (250 mL) mushrooms, sliced

Directions

  1. Toast the sliced 7 grain loaf.
  2. Place the vegetables on the toast with the goat cheese.
  3. Place under broiler for 4-5 minutes or until the cheese is golden.
