7 Grain Bread with Vegetables, Herbs, Goat Cheese & Olives
This recipe is great for any type of leftover or grilled vegetables. The goat cheese can be replaced with any other type of cheese (blue, feta, Stilton, Swiss, Edam).

4 slices of toasted 7 grain bread
1 cup (250 mL) goat cheese
2 tbsp (30 mL) fresh rosemary
1 small zucchini, sliced lengthwise
1 small tomato, sliced
1/2 cup (125 mL) olives
1 sweet red pepper, sliced lengthwise
1 cup (250 mL) mushrooms, sliced
- Toast the sliced 7 grain loaf.
- Place the vegetables on the toast with the goat cheese.
- Place under broiler for 4-5 minutes or until the cheese is golden.
