Chilled Cantaloupe Soup
This cold melon soup, spiced with cinnamon, is a light and colourful meal starter.
Preparation Time: 10 minutes
Serves: 6
Ingredients
1 medium cantaloupe, peeled, seeded, and cut into cubes
2 cups orange juice
¼-½ tsp ground cinnamon
Fresh mint leaves (optional)
Directions
- Place cantaloupe and ½ cup orange juice in a blender or food processor, cover and puree until smooth.
- Transfer to a large bowl and stir in lime juice, cinnamon and remaining orange juice. Cover and chill at least 2 hours. Garnish with mint if desired.
