Ingredients

2 large ripe tomatoes, peeled, seeded, and diced (750 mL/3 cups)
125 mL (1/2 cup) low-sodium tomato sauce
3 green onions, including tops, finely chopped (75 mL/1/3 cup)
45 mL (3 tbsp) minced fresh cilantro (coriander), or 45 mL (3 tbsp) minced parsley plus 7 mL (1-1/2 tsp) dried cilantro
1 medium-size jalapeño pepper, seeded and finely chopped (about 22 mL/1-1/2 tbsp)
2 mL (1/2 tsp) salt, or to taste
15 mL (1 tbsp) red wine vinegar (optional)

Directions

  1. In a medium-size bowl, combine the tomatoes, tomato sauce, green onions, cilantro, jalapeño pepper, salt, and vinegar if desired.
  2. Refrigerate, covered, until ready to serve. This salsa is best eaten within a few hours after it is made, but it can be refrigerated for up to 2 days.
