Spinach, Mushroom and Brie Grilled Cheese Sandwiches

1 tbsp (15 mL) extra-virgin olive oil
½ lb (250 g) cremini mushrooms, trimmed and sliced
10 oz (300 g) baby spinach, rinsed and dried
kosher salt and freshly ground black pepper
8 slices multigrain or whole wheat bread
6 oz (175 g) brie cheese, crust on or off, thinly sliced
2 tbsp (25 mL) soft butter—optional

Directions

  1. Heat olive oil in a large skillet. Add mushrooms and cook until any liquid in pan evaporates. Add spinach and cook until just wilted. Season to taste with salt and pepper. Drain if necessary.
  2. Make sandwiches by topping 4 slices of bread with mushrooms and spinach. Add slices of cheese in a single layer. Top with remaining bread.
  3. Brush each side of sandwich with a little soft butter, if using.
  4. Grill sandwiches in a panini maker until cheese melts, or heat a heavy skillet on medium high, brush with olive oil and cook sandwiches, pressing firmly, a few minutes on each side, until cheese starts to melt and sandwich is browned.
