Vegan Black Bean Soup

Ingredients

1 tbsp (15 mL) olive oil
1 large onion, chopped
1 stalk celery, chopped
2 carrots, chopped
4 cloves garlic, minced
2 tbsp (25 mL) chili powder
1 tbsp (15 mL) ground cumin
1 tsp (5 mL) salt
Pinch black pepper
4 cups (1 L) vegetable broth
3 cans (each 19 oz/540 mL) black beans, drained and rinsed
1 can (19 oz/540 mL) whole kernel corn, drained and rinsed
1 1/2 cups (375 mL) canned crushed tomatoes
2 tsp (10 mL) lime juice

Directions

1. In a large saucepan, heat oil over medium-high heat. Sauté onion, celery, carrots and garlic until softened, about 5 minutes. Add chili powder, cumin, salt and black pepper; cook for 1 minute. Stir in vegetable broth, half of the beans and the corn. Bring to a boil.
2. Meanwhile, in a food processor or blender, process remaining beans, tomatoes and lime juice until smooth. Stir into soup mixture; reduce heat to medium-low and simmer for 15 minutes.
