Ingredients
2 tbsp (30 mL) unsalted butter
1 medium onion, chopped
2 apples, peeled, cored and cubed
2 cups (500 mL) puréed cooked pumpkin
½ cup (125 mL) apple juice
½ cup (125 mL) applesauce
2 tbsp (30 mL) brown sugar
½ tsp (2 mL) cinnamon
½ tsp (2 mL) dried thyme
½ tsp (2 mL) salt
½ tsp (2 mL) white pepper
¼ tsp (1 mL) ground nutmeg
1 bay leaf
6 cups (1.5 L) vegetable stock
Directions
- In a large soup pot, melt the butter. Add the onion and apples; sauté for 3 to 4 minutes or until apples are tender.
- Stir in pumpkin, apple juice, applesauce, brown sugar, cinnamon, thyme, salt, pepper, nutmeg, bay leaf and stock.
- Bring to a boil; reduce heat and simmer for 15 minutes. Remove the bay leaf before serving.
