Mint Melon Soup

Ingredients

2 ripe melons
120ml (½ cup) sugar
60ml (¼ cup) mint
1.2ml (¼ tsp) ground pepper
175ml (¾ cup) white wine
6 thin prosciutto slices
6 bread sticks

Directions

  1. Cut two melons in half and core them. Scoop the flesh using melonball utensil and set aside.
  2. Remove all remaining melon flesh and place in food processor. Add sugar and mint and mix well. Add white wine and mix until textures is smooth. Refrigerate until serving.
  3. Wrap prosciutto around breadsticks. 
  4. Garnish soup with fresh mint and serve with prosciutto breadsticks.

Note: Pair with a dry fruity white wine from Alsace or the Loire.
