Mint Melon Soup
Ingredients
2 ripe melons
120ml (½ cup) sugar
60ml (¼ cup) mint
1.2ml (¼ tsp) ground pepper
175ml (¾ cup) white wine
6 thin prosciutto slices
6 bread sticks
Directions
- Cut two melons in half and core them. Scoop the flesh using melonball utensil and set aside.
- Remove all remaining melon flesh and place in food processor. Add sugar and mint and mix well. Add white wine and mix until textures is smooth. Refrigerate until serving.
- Wrap prosciutto around breadsticks.
- Garnish soup with fresh mint and serve with prosciutto breadsticks.
Note: Pair with a dry fruity white wine from Alsace or the Loire.
