Cold Strawberry and Raspberry Soup

Ingredients

400g (14oz) strawberries
250g (9oz) raspberries
Juice of 1 orange
80ml (1/3 cup) sugar
200ml (3/4 cup) rosé wine
30ml (2 tbsp) chopped mint
½ cucumber, seeded and finely sliced

Directions

  1. In a food processor, combine strawberries and raspberries.
  2. Add sugar, orange juice and chopped mint. Mix for a few seconds.
  3. Add rosé wine and stir 20 seconds.
  4. Garnish with cucumber slices.

The soup can be made in advance and refrigerated for several hours before serving.
