454 g (1 lb) Italian-style sausage, sliced 2.5 cm (1 in) thick
1 medium-size yellow onion, cut into 2.5 cm (1 in) cubes
1 large sweet green pepper, cored, seeded and cut into 2.5 cm (1 in) squares
1 large sweet red pepper, cored, seeded and cut into 2.5 cm (1 in) squares
568 g (1 1/4 lb) small new potatoes, cut into 2 cm (3/4 in) cubes
175 mL (3/4 cup) water
0.5 mL (1/8 tsp) black pepper

Directions

  1. Brown the sausage on all sides in a deep 30 cm (12 in) skillet over moderate heat — about 10 minutes. Drain off all but 30 mL (2 tbsp) of the drippings.
  2. Stir in the onion, green and red peppers, potatoes, water, and black pepper. Reduce the heat to low, cover, and cook for 15 to 20 minutes or until the potatoes are tender.
