Chicken Sandwich and Ham Sandwich Platter

Ingredients

60ml (¼ cup) mayonnaise
5ml (1 tsp) Dijon mustard
60ml (¼ cup) sour cream
½ bunch tarragon
8 sprigs parsley
2 white rolls
4 slices cooked chicken
Spinach leaves
½ pepper cut into strips
2 multigrain rolls
100g (4oz) cooked ham
Arugula
2 slices Swiss cheese

Directions

  1. In a mixing bowl, combine tarragon and parsley. Add mayonnaise, mustard and sour cream. Let stand.
  2. Slice multigrain and white rolls in half and spread the herbed mixture on all halves.
  3. On multigrain rolls, place cheese slices, arugula, ham. Close the rolls and cut in half.
  4. On white rolls, place spinach leaves, cooked chicken and pepper strips. Close the rolls and cut in half.
  5. Serve sandwiches on a platter with a cluster of grapes.
