Vegetarian Spring Kale Salad

Looking for a quick, delicious and healthy snack? Learn how you can easily prepare this yummy and refreshing salad this summer.
Ingredients
* bunch Kale
1 Garlic Clove
1 Tsp (15 mL) Olive Oil
1 Beet, shredded
* ( 50 mL) Avocado
1 Carrot, shredded
1oz (30 mL)Light Feta
Dressing:
1 Tbl Tahini
1 Tbl Maple Syrup
2 Tbl Cider Vinegar
Water to liquefy
Directions
1. Cut up kale as you would a head of lettuce. Heat olive oil and garlic in a pan on med-high heat. Throw in kale and sauté until bright green. Remove from pan and let cool.
2. Mix all dressing ingredients together until dressing is to desired texture. (Add water to liquefy). Combine all ingredients and toss into dressing. Enjoy!
