Vegetable Pasta Salad
Ingredients
11oz (300g) short pasta, cooked
1 bell pepper, chopped
2 zucchini, diced
2 tomatoes, diced
15ml (1 tbsp) lemon zest
120ml (½ cup) black olives
10 basil leaves
120ml (½ cup) olive oil
Directions
- Cut basil into chiffonade (long, thin strips).
- In a large bowl, combine basil, cooked pasta, black olives, tomatoes, lemon zest, zucchini and peppers.
- Add salt and olive oil to taste.
- Sprinkle with chopped chives and serve.
