Marinated Shrimp Cocktail in Lettuce Cups

1 lb (500 g) large shrimp, peeled and deveined (leave tails on)
1 tsp (5 mL) Old Bay or other seafood seasoning
1 tsp (5 mL) grated lime zest
1/2 cup (125 mL) fresh lime juice
3 tbsp (45 mL) pickling spice
1/2 cup (125 mL) bottled seafood or chili sauce
1/4 cup (60 mL) no-salt-added ketchup
1 tsp (5 mL) prepared horseradish
1 head green-leaf lettuce
(about 8 oz/250 g) 4 scallions, thinly sliced

Directions

Spread shrimp in single layer in shallow baking dish. Sprinkle with seafood seasoning, lime zest, and 1/4 cup (60 mL) lime juice. Cover and refrigerate 30 minutes, turning once. Meanwhile, put pickling spice in centre of an 8-inch (20 cm) square of cheesecloth and tie with kitchen string, or use a tea ball. Add to medium saucepan of water and bring to boil. Add shrimp and any juices collected in dish and cook, uncovered, just until opaque throughout, about 2 minutes (do not overcook). With slotted spoon, transfer shrimp to colander and rinse with cold running water. Put shrimp into medium bowl. Toss with remaining lime juice. Cover and refrigerate until cold, at least 30 minutes. Mix seafood sauce, ketchup, and horseradish in small bowl. Refrigerate until time to serve. Line each of 4 shrimp cocktail cups or goblets with a few lettuce leaves. Thinly shred remaining lettuce and divide evenly among cups; sprinkle each with 1/4 of scallions. Put a spoonful of cocktail sauce into each cocktail cup and 1/4 of shrimp on top, draping some over side. Serve with re-maining sauce. Makes 4 servings.
