Wild Asparagus
Ingredients
1 bunch asparagus
1 stick fresh goat cheese
2 tomatoes, diced
120ml (½ cup) olive oil
1 sprig of chopped basil
1 red bell pepper cut in strips
Directions
- Peel asparagus, and steam.
- Slice goat cheese. In a small bowl, mix olive oil and basil.
- To serve, place some asparagus on each plate. Add strips of red pepper and tomato, sprinkle with basil oil and garnish with goat cheese.
