Wild Asparagus

Ingredients

1 bunch asparagus
1 stick fresh goat cheese
2 tomatoes, diced
120ml (½ cup) olive oil
1 sprig of chopped basil
1 red bell pepper cut in strips

Directions

  1. Peel asparagus, and steam.
  2. Slice goat cheese. In a small bowl, mix olive oil and basil. 
  3. To serve, place some asparagus on each plate. Add strips of red pepper and tomato, sprinkle with basil oil and garnish with goat cheese.
