14 jumbo pasta shells
1 lb (500 g) ground turkey
2 cups (500 mL) finely chopped mushrooms
2 cloves garlic, minced
1 cup (250 mL) finely chopped fresh spinach
1/2 tsp (2 mL) EACH basil, oregano, and thyme
1 can (19 oz/540 mL) tomato sauce
1/2 cup (125 mL) grated Parmesan cheese

Directions

In a large pot of rapidly boiling water, cook pasta shells for 10 to 12 minutes or just until tender but firm. Rinse with cold water; set aside. In a large non-stick skillet over medium-high heat, cook turkey, mushrooms, and garlic, stirring and separating turkey as it cooks, 5 minutes or until moisture evaporates. Add spinach, basil, oregano, thyme, and 1 cup (250 mL) tomato sauce; cook for 2 minutes or until thickened. Remove from heat; stir in all but 1 tbsp (15 mL) cheese, salt, and pepper to taste. Let cool 5 minutes. Spoon 2 tbsp (25 mL) meat mixture into pasta shells and place in 8 inch (2 L) casserole dish. Spoon over remaining tomato sauce and sprinkle with reserved Parmesan cheese. Bake uncovered in a 350°F (180°C) oven 20 minutes or until sauce is bubbly.

Makes 6 to 8 servings.
