Sicilian Baked Rigatoni

Ingredients

400g (14oz) of rigatoni, cooked
120ml (½ cup) chopped basil
800ml (3 1/2 cups) canned tomatoes
6 slices grilled eggplant
6 slices grilled zucchini
15ml (1 tbsp) olive oil
300g (11oz) cup shredded mozzarella
Salt and pepper

Directions

  1. Preheat oven to 190C (375F).
  2. In a large bowl, mix cooked rigatoni, tomatoes and basil. Add salt and pepper.
  3. Transfer the rigatoni and sauce to a greased oven dish. Cover with slices of grilled eggplant and zucchini. Cover with grated mozzarella.
  4. Bake for 25 minutes.
  5. Serve bubbling hot.
