Ingredients

1 tbsp (15 mL) olive oil
2 large turkey sausages
1 small cooking onion, chopped
2 cloves garlic, chopped
1 can (14 oz/200 mL) stewed tomatoes, drained and chopped
2 medium sweet red peppers, diced
1/2 cup (125 mL) red wine
1/2 tsp (2 mL) dried basil
1/2 tsp (2 mL) dried mint
1/2 tsp (2 mL) paprika
1/2 tsp (2 mL) black pepper
1/2 cup (125 mL) cream
2 cups (500 mL) penne

Directions

Turkey sausage is a delicious alternative to other types of sausages.

In a large sauté pan, heat oil. Add turkey sausages and cook through. Remove, slice into 1-inch pieces, and set aside. In the pan, sauté onion and garlic 2 to 3 minutes or until the onion is translucent. Add tomatoes, red peppers, red wine, basil, mint, paprika, salt, and pepper. Reduce heat and allow mixture to simmer about 5 to 8 minutes. Add cream and gently stir. Meanwhile, in a large stockpot, cook penne in 6 cups of slightly salted water for about 8 to 10 minutes or until tender. Drain and rinse with cold water. Add penne and sausage to the sauce in the pan, mix well and serve immediately.
