Penne with Ricotta
Ingredients
450g (1lb) penne pasta
250g (1/2lb) ricotta
300g (¾lb) frozen spinach, thawed and chopped
15ml (1 tbsp) butter
60ml (¼ cup) grated parmesan cheese
15ml (1 tbsp) nutmeg
Salt and pepper
Directions
- In a large quantity of salted boiling water, cook the penne al dente. Drain and set aside.
- Place chopped spinach in a large bowl. On top of the bowl, pass the ricotta through a sieve, pressing with the back of a spoon.
- Add butter, grated Parmesan, and nutmeg. Salt and pepper generously. Mix well.
- Add cooked penne to the ricotta mixture. Mix well and serve immediately.
