Macaroni with Squash

Ingredients

450g (1lb) cooked macaroni
500g (1¼ lb) peeled, diced squash
1 sliced onion
250ml (1 cup) whipping cream
3 amaretti cookies, crushed
15ml (1 tbsp) butter
Grated Parmesan cheese
Salt and pepper

Directions

  1. Melt butter in a large saucepan. Add onions and cook over medium heat until transparent.
  2. Add squash and cook a few minutes. Add 60ml (¼ cup) of water, cover saucepan and let cook for 8 minutes.
  3. Add cream and cooked macaroni. Mix, allowing macaroni warm up. Add crushed amaretti cookies and mix well.
  4. Serve topped with grated Parmesan
