Italian-Style Burgers

Ingredients

125 ml (1/2 cup) mayonnaise
30 ml (2 tbsp) dried tomatoes in oil, blotted dry, in thin strips
Salt and freshly ground pepper, to taste
720 g / 1 1/2 lb lean ground beef
4 grey shallots, chopped finely
2 cloves, garlic, minced or pressed
Salt and freshly ground pepper, to taste
90 g (3 oz) old Cheddar
2 ciabatta breads, cut in half
Arugula leaves, trimmed, to taste
2 Italian plum tomatoes, sliced thinly

Directions

  1. In a bowl, combine the mayonnaise, dried tomatoes, salt and pepper. Set aside.
  2. Preheat the barbecue.
  3. In another bowl, combine the meat, shallots, garlic, salt and pepper. Shape into four burgers.
  4. Lightly oil the barbecue grill and cook the burgers for about 5 minutes on each side. For additional safety, check the internal temperature of the meat with an instant-read thermometer. It is done when the temperature is 70°C / 160°F.
  5. Using a cheese slicer, slice the Cheddar very thinly. Place the meat on a heated plate, top with the cheese slices and cover to melt.
  6. Cut the bread halves in half horizontally and grill lightly on the inside.
  7. To assemble the burgers, spread both sides of the bread with the mayonnaise and garnish with arugula and tomato slices.
