Grilled Rabbit With Herbs

Cooking time:
35 minutes

Ingredients

1 L (4 cups) cold water
125 ml (1/2 cup) coarse salt
125 ml (1/2 cup) sugar
4 rabbit legs

Marinade

5 ml (1 tsp) fresh rosemary leaves, minced
3 ml (1/2 tsp) cracked black pepper
75 ml (1/3 cup) olive oil
125 ml (1/2 cup) white wine
15 ml (1 tbsp) hot mustard
2 cloves garlic, minced
5 ml (1 tsp) paprika

 

Directions

  1. In a bowl, dissolve the salt and sugar in the water. Add the rabbit and refrigerate 1 hour.
  2. Drain the rabbit pieces, rince in cold water and pat dry.
  3. In a bowl, combine all the ingredients for the marinade. Add the rabbit legs and marinate 30 minutes in the refrigerator.
  4. Preheat the grill.
  5. Grill the rabbit, turning frequently, until golden and tender, brushing frequently with the marinade.*


Tip: Rabbit meat is very lean and must be cooked over medium heat to prevent it from drying out and getting tough. The heat is right if you can hold the palm of your hand close to the grill for 3 to 5 seconds.
