Creamed Spinach

In 1919, Elzie Crisler Segar created Popeye, the cartoon character who still reminds children of all ages to eat their spinach so they will grow up big and strong like him. This recipe is a delicious, low-fat way to serve this healthy vegetable.

Ingredients

2 teaspoons unsalted butter or margarine

2 pounds fresh spinach, washed, dried, and coarsely chopped, or 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry

2 green onions (scallions), with tops, chopped

1/2 teaspoon each ground nutmeg and black pepper

1/4 teaspoon salt, or to taste

3/4 cup low-fat (1% milkfat) milk

6 ounces low-fat cream cheese

2 large egg whites

1 large ripe tomato, cut into wedges

Directions

Step 1:

Preheat oven to 350°F and grease a 1 1/2-quart shallow baking dish. In a medium saucepan, melt the butter over medium heat.

 

Step 2:

To the saucepan, add the spinach, green onions, nutmeg, pepper, and salt and cook for 2 minutes, or until heated through. Add the milk and cream cheese and stir for 5 minutes, or until the cheese melts. Remove from heat.

 

Step 3:

In a medium bowl, with an electric mixer on high, beat the egg whites until stiff peaks form. Gently fold into the spinach mixture and spoon into the baking dish. Bake, uncovered, for 20 minutes, or until puffy and lightly browned. Garnish with the tomato wedges and serve immediately.
