Baby Peas With Morels

Dress up peas with some morel mushrooms for a quick, fancy side dish.

Ingredients

3 ounces (2 cups) dried morel mushrooms

4 10-ounce packages frozen baby peas

1 tablespoon olive oil

1 tablespoon butter

1 small onion, minced

Salt

 

Directions

Step 1:

Place mushrooms in a medium bowl, and cover with boiling water. Set aside to soften 30 minutes. Rinse well and squeeze dry.

 

Step 2:

Place peas and enough lightly salted water to cover in a medium saucepan and heat to boiling. Remove from heat and drain.

 

Step 3:

In a large skillet, heat olive oil and butter, and cook onion over medium heat until softened. Add drained peas and mushrooms, and toss to heat through. Season with salt to taste.
