Mini Biscuits and Ham

These little mouthfuls are packed with flavour-and the biscuits can be made up to a month ahead and frozen. Then simply thaw and assemble the day of the party.

Ingredients

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter, cut into small pieces
3/4 cup whole milk
Honey mustard
8 ounces country ham, cut into thick slices

Directions

  1. Preheat oven to 450°F. In large bowl, combine flour, baking powder, and salt. With pastry blender or 2 knives used scissor fashion, cut in butter until mixture resembles fine particles. Add milk and stir just enough to moisten flour.
  2. Turn dough onto floured surface and knead just enough to mix thoroughly, about 30 seconds. Using a lightly floured rolling pin, roll out into a 6-inch x 8-inch rectangle. Cut dough using a 1-1/2-inch biscuit cutter, to make 30 biscuits.
  3. Place biscuits on ungreased cookie sheet about 1/2 inch apart. Bake 10 to 12 minutes, or until golden. Transfer biscuits to wire racks to cool. (Biscuits can be made ahead to this point if wrapped well in foil and frozen. Thaw at room temperature.)
  4. To serve, split each biscuit horizontally in half. Spread inside of 1 half with a little mustard. Place ham slice on bottom half of biscuit and place top of biscuit on ham to make a little sandwich.
