Bacon, Apple and Cheddar Melt

Cooking time:
7 minutes

Ingredients

4 slices turkey bacon, halved crosswise
8 slices whole-grain bread, toasted
8 tsp (40 mL) Dijon mustard
2 apples (1 red, 1 green) halved and thinly sliced
1 medium red onion, thinly sliced
5 oz (142 g) reduced-fat sharp cheddar cheese, shredded

Directions

  1. Preheat broiler. Cook turkey bacon in medium nonstick skillet until crisp, about 5 minutes. Drain and set aside.
  2. Brush all 8 slices of toast with 1 tsp (5 mL) mustard each. Place 4 slices of toast, mustard-side up, on broiler pan. Top toast with apple slices and onion slices.
  3. Sprinkle cheddar over onion and broil 4 inches (10 cm) from heat until cheese has melted, about 2 minutes.
  4. Top each sandwich with two pieces of bacon and remaining toast. Cut in half.
