Ingredients

2 teaspoons olive oil
4 scallions, thinly sliced
3 cloves garlic, minced
230 g (8 oz) well-trimmed pork tenderloin
230 g (8 oz) well-trimmed beef top round
1/2 cup cooked rice
2 tablespoons tomato paste
1/3 cup chopped fresh dill
1/3 cup chopped fresh mint
2 teaspoons grated lemon zest
1/2 teaspoon dried oregano
1/2 teaspoon salt
110 g (4 oz) crumbled feta cheese

 

Directions

  1. In a small skillet, heat the oil over low heat. Add the scallions and garlic, and cook for 3 minutes or until the scallions are tender. Transfer the mixture to a large bowl.
  2. Preheat the oven to 350°F (180°C). In a food processor, combine the pork and beef and process until finely ground. Transfer to the bowl with the ­scallion mixture. Add the rice, tomato paste, dill, mint, lemon zest, oregano, salt and 2 tablespoons of water. Mix until well combined.
  3. Spoon half the meat mixture into a 20 x 10-cm (8H x 4H-in.) metal loaf pan. Sprinkle with the feta cheese and top with the remaining meat mixture. Tap the pan on the work surface several times to pack the mixture.
  4. Bake for 25 minutes, or until the juices run clear when the loaf is poked with a toothpick. Serve hot, warm or chilled.
