Ingredients
250 mL (1 cup) granulated sugar
250 mL (1 cup) packed brown sugar
175 mL (3/4 cup) butter or margarine, softened
2 eggs
550 mL (2-1/4 cups) all-purpose flour
500 mL (2 cups) crisp oatmeal flakes with raisins
5 mL (1 tsp) baking powder
5 mL (1 tsp) baking soda
250 mL (1 cup) chopped salted peanuts
Directions
In a large mixing bowl, combine sugars and butter. Beat at medium speed with electric mixer until light and fluffy. Add eggs, one at a time, beating after each addition. Add flour, oatmeal flakes, baking powder and baking soda. Beat at low speed until soft dough forms. Stir in peanuts. Cover with plastic wrap. Chill 1 to 2 hours, or until firm.
Heat oven to 190°C (375°F). Shape dough into 2.5 cm (1-inch) balls. Place balls 5 cm (2 inches) apart on ungreased cookie sheets. Bake for 12 to 14 minutes, or until golden brown. Cool completely before storing.
Makes 5 1/2 dozen cookies.
