Gluten-Free Chickpea-Chocolate Cake

Ingredients
10 oz (300 g) semi-sweet chocolate, chopped, or 1/2 cups (375 mL) semi-sweet chocolate chips
1 (19 oz/540 mL) can chickpeas, rinsed and drained
4 eggs
3/4 cup (175 mL) granulated sugar
Directions
1. Preheat oven to 350°F (180°C). Grease a 9-inch (23-cm) round—or heart-shaped—cake pan and either line it with parchment paper or dust bottom and sides of pan with sifted gluten-free cocoa powder.
2. In double boiler or heatproof bowl set over pot of barely simmering water, melt chocolate, stirring occasionally, until smooth.
3. In bowl of a food processor, combine chickpeas, eggs and sugar; process until smooth. Add melted chocolate and blend until smooth, stopping occasionally to scrape down sides and make sure chocolate is completely mixed.
4. Spread batter in prepared cake pan. Bake in preheated oven for 40 minutes, or until a knife inserted into the centre of the cake comes out clean. Cool in pan on a wire rack for 10 to 15 minutes before transferring to a serving plate.

Loved this cake. It is so easy to make. You can't tell that there are chickpeas in it at all. The taste is rich & very chocolatey. This is a great find for anyone who loves chocolate & is eating gluten free.
Baked this recipe with my mom tonight and it turned out great! We decided to make these into muffins and mini-muffins. Came out to about a dozen of each. The batter will slightly rise so be careful! Make sure to give enough cooling time as the end result is quite moist. Overall a very tasty very chocolatey gluten free alternative :)
I have a similar recipe - it calls for 1 1/2 cups of chocolate chips. I think there may be an error in the recipe posted above. It is a great cake (with 1 1/2 cups choc chips!) and my non-celiac grandchildren always ask for "Grandma's special chocolate cake"
