Ingredients

45 ml (3 tbsp) unsalted butter
2 fennel bulbs, quartered
50 ml (¼ cup) brown sugar
75 ml (â…“ cup) white wine
1 can, 284 ml (10 oz) vegetable broth
5 ml (1 tsp) fresh thyme leaves
15 ml (1 tbsp) fresh oregano, chopped
Salt and freshly ground pepper, to taste
4 sprigs thyme

 

Directions

  1. In a skillet, melt the butter over medium heat and brown the fennel quarters on each side. Add the brown sugar, wine, broth and herbs. Simmer, covered, for 8 minutes.
  2. Remove the fennel and keep Cucina Etc., RD.ca web exclusive warm. Reduce the sauce, uncovered, until it is slightly syrupy. Season with salt and pepper and pour over the fennel.
  3. Garnish with sprigs of thyme.
  4. Serve immediately.
