Ingredients

1 can (400 mL) light coconut milk
1 ½ cups (375 mL) mango juice or apricot juice
2 tbsp (25 mL) packed brown sugar
¼ tsp (1 mL) each ground ginger, cinnamon and salt
1 ½ cups (375 mL) large-flake rolled oats
1 apple, peeled and chopped
1 mango, peeled and chopped

Directions

In a saucepan, whisk coconut milk, juice, sugar, ginger, cinnamon and salt; bring to a boil over high heat; stir in oats. Reduce heat and simmer, uncovered, for 10 minutes, stirring occasionally. Remove from heat; stir in apple and mango. Transfer to Thermos.
