Pumpkin Walnut Muffins

Great for any time of day, for whatever occaision, these delicious pumpkin muffins with their sweet streusel are lip-smackin' good!

Ingredients

1 cup vegetable oil
3 cups brown sugar, packed
4 large eggs
1 tbsp vanilla
3 cups flour
2 tsp baking powder
1 tsp salt
1 tsp nutmeg
1½ tsp cinnamon
½ tsp ground ginger
¼ tsp ground cloves
¼ tsp baking soda
½ cup chopped walnuts, toasted
1 3/4 cups pumpkin purée

Streusel:
1/3 cup flour
¼ cup brown sugar, packed
½ tsp cinnamon
¼ cup hard margarine, cubed
½ cup chopped walnuts, toasted

Directions

  1. Beat together oil and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla.
  2. Sift together flour, baking powder, spices and baking soda. Stir in walnuts. Alternately stir flour mixture and pumpkin purée into oil and sugar mixture. Mix well.
  3. Line muffin pans with paper cups and fill three quarters full. For the streusel, mix together flour, sugar and cinnamon in a small bowl.
  4. Cut in the margarine with a pastry cutter, then stir in walnuts. Sprinkle this mixture evenly over the batter.
  5. Bake at 350°F for 30 to 35 minutes or until muffins test done.
  6. Remove from oven and let cool 10 minutes before serving.
