Orange-Tomato Blush

This wonderfully tangy drink, packed with energy-yielding carbohydrates, is refreshing for breakfast or brunch or as a pick-me-up at any time of day. It also makes an excellent alcohol-free alternative to a cocktail before lunch or dinner.

Ingredients

1 ½ pound watermelon, peeled, seeded and cut into chunks
Grated zest and juice of 1 orange
Grated zest and juice of 1 lime
Ice
Orange and lime slices (optional)

Directions

  1. In a food processor or blender, puree mango, tomatoes, watermelon, orange and lime zest and juice until smooth. (You may have to do this in 2 batches.)
  2. Half fill 4 large glasses with ice. Fill with orange-tomato blush. Garnish with orange and lime slices, if you like. Serve immediately.

Helpful Hint: If you don’t have a blender or food processor, you can still whip up smoothies with a wire whisk in a deep bowl.
