Beets Stuffed With Goat Cheese

Ingredients

12 small beets
Salt and freshly ground pepper, to taste
115 g (4 oz) fresh goat cheese
20 mL (4 tsp) currants
15 mL (1 tbsp) pine nuts, toasted
15 mL (1 tbsp) 35% cream
5 mL (1 tsp) orange zest, grated

 

Directions

  1. In a saucepan, cook the beets in boiling water for about 45 minutes – until just tender but not too soft. Rinse under cold water, drain and peel.
  2. Preheat oven to 200°C / 400°F.
  3. Cut a slice off the bottom of each beet so it sits upright. Cut a slice off the top and scoop out a cavity using a small spoon. Season the cavity with salt and pepper and set the beets aside.
  4. In a bowl, combine the remaining ingredients. Stuff the beets with the mixture and arrange them in a lightly oiled baking dish. Bake 5 minutes or until the cheese is lightly browned.
  5. Serve.
