Fatty fish has a luscious texture. Any recipe for salmon will work well with Arctic char.


 

Ingredients

 

½ cup (125 mL) bread- crumbs (preferably panko)
¼ cup (50 mL) rolled oats
1 tbsp (15 mL) chopped fresh parsley
1 tbsp (15 mL) chopped fresh basil
1 tbsp (15 mL) chopped fresh chives or green onions
1 tsp (5 mL) salt
¼ tsp (1 mL) pepper
2 tbsp (25 mL) extra virgin olive oil
2 lbs (1 kg) boneless, skinless, Arctic char fillet
3 tbsp (45 mL) thick, unflavoured yogourt

Get Cooking!

  1. In a bowl, combine bread crumbs with rolled oats, parsley, basil, chives, salt and pepper. Stir in olive oil. Mix. Crumbs should be completely moistened.
  2. Arrange fish on a baking sheet lined with parchment paper. Season lightly with salt and pepper. Spread with yogourt. Pat in bread-crumb mixture.
  3. Bake in a preheated 425°F (220°C) oven for 10 to 12 minutes or just until fish is cooked through. Baking time will depend on the thickness of the fish.
 

Makes 6 to 8 servings
