A delicious pumpkin treat that tastes good and good for you.
Great for any time of day, for whatever occaision, these delicious pumpkin muffins with its sweet streusel is lip-smackin' good!
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Makes 30 muffins
Ingredients
1 cup vegetable oil
3 cups brown sugar, packed
4 large eggs
1 tbsp vanilla
3 cups flour
2 tsp baking powder
1 tsp salt
1 tsp nutmeg
1½ tsp cinnamon
½ tsp ground ginger
¼ tsp ground cloves
¼ tsp baking soda
½ cup chopped walnuts, toasted
1 3/4 cups pumpkin purée
Streusel:
1/3 cup flour
¼ cup brown sugar, packed
½ tsp cinnamon
¼ cup hard margarine, cubed
½ cup chopped walnuts, toasted
Directions
- Beat together oil and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla.
- Sift together flour, baking powder, spices and baking soda. Stir in walnuts. Alternately stir flour mixture and pumpkin purée into oil and sugar mixture. Mix well.
- Line muffin pans with paper cups and fill three quarters full. For the streusel, mix together flour, sugar and cinnamon in a small bowl.
- Cut in the margarine with a pastry cutter, then stir in walnuts. Sprinkle this mixture evenly over the batter.
- Bake at 350°F for 30 to 35 minutes or until muffins test done.
- Remove from oven and let cool 10 minutes before serving.
